There’s something about cookies that have a very calming effect to them. They are the ultimate comforting food, perfect for all situations. You just broke up with your boyfriend and your friends show up with freshly baked cookies. You had a rough day at school, but your mom bakes cookies and everything feels better. Cookies have a certain healing power to them, not only because they are so chocolatey and delicious, but because they take us back to how we felt when we ate them in an unpleasant situation.
Every time I eat a cookie, I reminisce to my childhood, to growing up in a large family, to simpler times. Every time I eat a cookie, I remember how hard my parents worked every day and how stressed out they were day in day out, but when my mom would bake us cookies it was as if nothing else mattered.
Cookies are more than just a dessert (or breakfast if you’re me), they are an expression of love, compassion, and mostly comfort.
Not to mention, there is no better feeling than being able to combine your love for brownies and cookies to create one magnificent dessert. These brownie cookies are so soft and moist with the fudge oozing out from the middle; it’s absolute perfection in every single way. This is such a quick and easy recipe; definitely a must for chocolate addicts everywhere.
My favorite part about this recipe is that you can customize it in so many ways. I threw in chocolate chips AND M&Ms, but you can easily use white and milk chocolate chips, Reese’s pieces or any other kind of M&Ms or small bite size candies. I have a weakness for peanut butter, so I went for the Peanut Butter M&Ms. You can also use any kind of boxed brownie mix, but I do recommend using a good quality one as it is the main ingredient for your cookies.

18 oz Brownie Mix (you only need the dry mix-I used Ghiradelli Brownie Mix)
1 Tsp Vanilla Extract
1/4 Cup Flour
1/4 Cup Canola/Vegetable Oil
1/2 Cup Chocolate Chips
1 cup mini M&Ms (or any other kind of M&Ms/small candy pieces you wish to use)
- Preheat oven to 375º F
In a stand mixer, combine the brownie mix, flour, eggs, oil, and vanilla extract to make a smooth dough. Make sure you don’t over-mix.
Fold in the chocolate chips and M&Ms.
I use an ice cream scoop to get the perfect (and even) amount of dough for my cookies. Scoop up 1 scoop (ice cream scoop, about 2 tbsps) onto a cookie sheet. Keep about a couple of inches distance between each scoop so your cookies don’t touch each other.
Bake for 9 minutes
Remove from oven and let cool for 3 minutes on the pan before moving the cookies to a cooling rack.
Top these cookies with a small scoop of Vanilla ice cream to make dessert time more fun
