Anyone who knows me knows how much I love bread-and bread with Balsamic Vingar… even better. I was first introduced to Bruschetta by my best friend, Amanda. A bunch of us friends had met up for dinner and she had made bruschetta, chicken breasts, and we paired it with a nice bottle of Moscotto. It was our favorite kind of girls night; we would just meet up to eat and have a great time talking about life, food, and our future plans.

I can’t take credit for my recipe for Bruschetta because it’s actually Amanda’s. It is a fool proof recipe that is always a hit when I make it for dinner parties.

I personally love, love, LOVE the combination of balsamic vinegar and olive oil with bread. I make this differently every time; sometimes I just combine all the ingredients in a bowl and pile it on the bread (as pictured) and sometimes I put all the ingredients (minus the olive oil and balsamic vinegar) and create a balsamic glaze with the vinegar and oil instead.

Either way you make it, you’ll be sure to have a delicious starter for your next dinner gathering.


1 loaf of French bread
Shredded Mozzarella Cheese
2 Tomatoes (diced into small pieces)
3 cloves of Garlic (finely chopped)
2 Tbs Olive Oil
2 Tbs Balsamic Vinegar (you can always add more if you’d like)
Salt & Pepper to taste


  1. Preheat oven to 375º F

  2. In a small mixing bowl combine the diced tomatoes, chopped garlic, salt & pepper, and cheese (I just put a small pinch of it since I put cheese on the bread as well).

  3. Add in olive oil and Balsamic vinegar into the mixture and mix well.

  4. Cut a few slices of bread (you want nice thick pieces that will hold the mixture without breaking).

  5. Drizzle olive oil and cheese over the slices of bread and stick it into the oven for about 10 minutes.

  6. I like my bread slices to be nice and crisp so they don’t break apart, so you can adjust how long you want them in the oven according to how you like your bread to be.

  7. Take the bread out and add the mixture onto the slices.

  8. Eat and Enjoy! 🙂
