EASY Vegan Meatball Subs

We veganized Meatball Subs and couldn’t be more thrilled with the outcome! Check out this EASY recipe for the BEST Vegan Meatball Subs..could there be a better comfort food? This recipe is SUPER easy to make and made gluten free or without adding any oil. Add some of your favorite homemade or store bought vegan cheese, smother your meatballs in your favorite marinara sauce and enjoy!





What’s the best flour to use?

You can use any gluten free flour you prefer, but I personally LOVE using chickpea flour for this recipe. It adds a little bit more flavor to the falafel and adds a lot more depth, plus I feel that it helps hold the mixture together a lot better than regular flour.





What’s the best cheese to use for the sub?

You can really use any cheese you prefer – there are several Vegan store bought shreds that melt really well for sub. I chose to use my homemade ricotta cheese (without the spinach) and just added that all over. You can also use some homemade cashew cream as the cheese (which is definitely the family favorite). Can I make these ahead of time?

Yes! Just roll up the meatballs, transfer to a freezer safe container or baggy, and stick them in the freezer. When you’re ready to cook them, just pop them in the oven for 30-35 minutes or on the stovetop in a frying pan.

Ingredients

  • 1 can chickpeas - drained and rinsed
  • 3 cloves garlic
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 - 1 tsp paprika
  • 1/2 tsp salt
  • 1 flax egg
  • 1/2 white onion
  • 1/4 cup chickpea flour
  • 1/2 cup gf bread crumbs (Italian style, recommended)
All else:
  • Marinara sauce
  • Vegan cheese - check out my homemade cheese
  • GF sub rolls - I use Schar Gluten free rolls or baguettes

  1. Preheat the oven to 400º and line a baking sheet with nonstick parchment paper
  2. vAdd chickpeas, onions, and garlic to a food processor - blend until smooth and transfer to a bowl

  3. Add the remaining ingredients for the meatballs, except the bread crumbs.
  4. Mix well to make sure everything is properly incorporated (your hands are your best tools)
  5. Roll the mixture into a ball sized shapes, roll them around in the bread crumbs and transfer to the baking sheet
  6. Bake at 400º for 20-25 minutes
  7. Time to make the meatball subs - Take the sub roll, spread your favorite vegan cheese on both sides, spread some heated up marinara sauce, add 3 meatballs, and smother with some more marinara sauce.
  8. Eat and enjoy :)
